Or Big Fish Isle, first time you get there... maybe any point afterward. Not sure.
Anyway, Djipi, I can't say I'm digging the new castle. Textures may look great up close, but there's not a lot of life going on with the stone. Just looks like a bunch of mud bricks stacked together. It really doesn't resemble anything, from anything. It's not Ganon's Castle from Ocarina of Time, and it's not Ganon's Tower from WW. Honestly, Djipi, this is your weakest work so far. No offense, of course, because everything has been stunning, but for a scene that really wowed me back on the N64, there isn't much inspiration going on for that texture work.
Go to Castle Hyrule in WW, then make your way outside, until just after you finish two moblins. From the top of these stairs, just before the hookshot points, use your telescope and check out Ganon's Tower in WW. THAT is some great stuff. We only see it for a glimps, but it is still richly detailed. Don't neglect the walls of the castle, just because players will only see the majority of it from a distance. Get some theme and life into those bricks! That is supposed to be the imposing, and intimidating object of Ocarina of Time. The reminder that no matter how much you set the world straight, you will STILL need to face that fortress, and everything which lay inside. So give the players some idea of what IS inside, even though all of us already know what is inside.

We don't need skulls or spikes, but some design. Glyphs, or SOMETHING. Something to indicate there is more going on than just brick. Like the idea that the castle itself is magical and dangerous. Ganon's Tower from WW did an outstanding job of this.
Also, consider changing the spikes. I always thought they looked really campy. Not at all inspired like the art and design of WW. You're call on that, however. Since they're just sprites there may only be so much you can do about it.
You're still doing fantastic Djipi, but I don't want to let you get away with anything less the standard you have established for yourself.

Also... I uh, really like that scene from Ocarina of Time, and I get the feeling you somehow made it look worse.

This is a picture posted on Fed's thread, but Ganon's Tower is still untextured.

You took away all the variety that was in there. All the different stone shapes, color, sizes, and designs. Which isn't necessarily a bad thing. Ganon's Tower in WW doesn't look like it is made from stacked pieces of stone. To put it simply, it looks weird, but there is lots and lots of detail and inspiration in the design.
Hope some of this critique helps, Djipi. I know you can do much much better! You're the best.
