is there a way of hacking or expanding n64 roms, then finding out what format the music/sound fx are, and then changing it for other music in that format? eg replace a music track in a game with an mp3 song, obviously converting the mp3 into the necessary format first?
is this possible in any way?

no, not afaik. the n64 doesn't have a sound chip which means that you can't do what you want.. log audio to mp3 is the closest you can come..

The decent one
If you want to do that you need to hack the rom, which is already nearly impossible, and you need to keep in mind the N64 is using a completely different sound system:

- Music isn't stored in wav or mp3 but in some kinda midi fomat.
- Special sounds which can't be done with the default sound device are done by putting wav or mp3 files in a certain order to play the music.
- If you want to store a few mp3s in the rom, you will get an insanely big file which can't be put on a cart anymore (if you're thinking in the way of the real N64).

If you are experienced and you want to spend time with this, go on, but most likely you have better things to do :)

ACTUALLY! Some N64 games (notably Rare's) do indeed use MP3 compression - look at the very first startup screen of Perfect Dark, for example.
