I have found one solution for the N64 controller during emulation. Because of Windows XP's screwy joystick configuration, you have to 'trick' your input settings for the game. My suggestion is this:
Download and use Project 64 emulator (which in my opinion, is the best N64 emulator). Then download N-Rage's Input Plugin (DirectInput8 V2 1.8 is the latest, I believe, and can be found at http://www.pj64.net/ under plugins) Make sure the plugin you downloaded is in the right folder (the same path Project 64 is installed in, in the plugins folder). Make sure your controller/converter is plugged in, turned on, and then fire up PJ64.

Under 'Options' and 'Settings', select N-Rage's DirectInput (if it is not in the drop-down menu, the plugin is not recognized and most likely it was not extracted to the right folder). You will be prompted to restart the emulator with DirectInput as the default controller plugin. Click OK.

Now, under 'Options' and 'Configure Controller Settings', you will see the setup menu for N-Rage's DirectInput. Now comes the tricky part. After setting all your usual buttons, (by clicking on the button you wish to assign with your mouse, then the button on the joystick you wish to use) you get to the Analog Stick setup. Now instead of clicking on the button and moving the analog stick in the direction you want, try this: Hold the controller in one hand, the mouse in the other. Now hold the analog stick in whatever direction you wish to assign BEFORE you click on the button. For instance, holding the analog stick up (Y Axis -) and THEN clicking on the 'Up' button. If it does not set right away, jiggle the analog stick (but keep it in the UP POSITION) a little. In the box next to it, it should say 'GamePad Y Axis -', or whatever axis you just set.

This works pretty fine for: Lik Sang N64 to USB (Named "Super Smart 2" under Devices)

I think this will work for other Adapters too, while this seems to be a general problem. Whatever, this will help a lot of frustrated Lik-Sang-Customers. Me, I am really reall happy cause it caused me a lot of headaches to test all plugins and all settings - Besides it's so easy.
