Can anybody recommend a good graphics plug-in for StarFox 64 to make the game more playable? Thankx.

Jabo's video plugin should work. You can also try Rice's video plugin. Both should work.
If none of the above works then it's probably a problem with your video card or its drivers.

I tried the plug-in you suggested, and now the game plays smooth for a little while, but at the same point every time it says that Project 64 has encountered a problem, and needs to close. Is it because my computer isn't powerful enough to run it maybe? I've never had this happen on any games before.

You could try a different emulator like 1964 or Mupen64 (This emu has recently been updated as well!)...
