That depends on the sound plugin you are using. Usually such an option (if it exists) can be found in the sound plugin's configuration window.

In the plugin config, look for the dummy audio plugin. I believe that plugin is just an empty plugin that does nothing with the sound data.

turning off sound wouldn't even make a difference if you look at the bottom it only uses 1 or 2% of the CPU

Using the dummyaudio.so plugin (ie, turning off sound) makes the emulator run much faster because the sound controls the rate of emulation. When the sound is disabled it runs at full speed, loading 100% of one cpu core, as fast as it can go.
