ePSXe will handle the memcards. Just save like you'd do on the real thing. Otherwise you can use save states. F1 to save, F2 to cycle slots and F3 to load.

I have tried saving inside the game - at the save points. But when I start the game again and try to load game the slots are empty.

Could it be that I should use the save state / load state instead? (F1 and so on).

If you want, then feel free. Save states aren't mem cards, though, but they work just as well.

That's fine. I just threw it out there on the off chance that you were quiting via the task manager or something. People do weird things like that sometimes.
