I can't get more than one controller to work for this is there any plugins in need to download I use Darkman's Dinput currently.

No. Darkman's DInput is the first and ONLY plugin for Chankast.

Is there another emulator or another way to have be able to operate 2 controllers at the same time?

No. Chankast is the only emu to run games *cough cough*.
