the right way of doing this would be to program the emu to capture a state followed by an input sequence.... no one does this yet. If you want a small file to show off to other peple with the emu.
If you want to make a general video file, you can use either (a) two PCs with standard output-input configuration or (b) one PC with something like microsoft's free movie capture thingy.
I take it this microsoft free movie capture thingy is available from microsoft.com???

You could just repeatedly take screen captures and pool it all together in MMM.
I use this quite a lot.

Not exactly what you are looking for...but you could always record video from a real N64 if you have video input hardware(like I do).
Nothing can stop me now.
HyperCam is great program for capturing video from anywhere.
