Just a quick question, is there a nice little program or plugin out there that I can use to rip textures from N64 ROMs?

try n64gfx 2.0 (www.zophar.net, n64 utilities section)
it extracts/inserts uncompressed images from n64 roms.
also you need "sprite viewer" proggy to find textures, if you can...
