I’ve got some sound issue in Shenmue 1, it is crappy and noisy, also there is no speech. Also some polygons in graphic is missing.

The sound being crappy and noisy is a known issue. Demul is far from perfect so don't expect flawless emulation.

My previous answer applies to graphics problems as well. Anyway, which graphics plugin are you using? Direct3D or OpenGL?
