I just started using nemu and its great except it lacks a bit in the graphics. I was hope that changing the GFX plugin would help but i don't know how i would do that. Could someone tell me how exactly i would change the GFX plugin?

Put a new GFX plugin in the Nemu plugins folder (remembering that if you wish to use certain plugins you'll need to copy over any files it complains about to the Nemu folder too).
Then go to: Options>Settings>Graphics plugin

Rice's daedalus 5.6.0, Glide64 0.7 (with Evoodoo or Hacktarux' glide wrapper), Orkin's GlN 0.4.1, Direct64 and Jabo's 1.40 (since sometimes may fix stuff which doesn't work correctly with Jabo's 1.5(.1)).
