Options > Config Audio Plugin > Audio Logging.
Click start before the music/sound starts and stop afterwards. Convert the WAV to mp3 with WinAMP or whatever you use normally.

Is it possible to turn off the sound "layers" that are playing? Like, to switch off the BGM to record SFX, or vice versa?

On the NSF players you can, AFAIK (Something like triangle wavs, and stuff like that).. Check out www.zophar.net.. Maybe they have something on it.

Afaik the N64 doesn't handle audio like that so that's a negative, i.e since it doesn't contain a sound chip all audio is played in one big lump...

Does it matter?
One of these days I'll get around to getting the songs recorded from Road Rash 64, which has a great soundtrack.
