PJ64 or 1964
Video Plugin: Jabo's 1.4 or 1.5 D3D

For input if you are looking for transfer pack emulation and analogue sensitivity go with n-rage direct input plugin:)

For your CPU, 1964 is probaly your best bet but for your GPU I really don't know... It's an old card, but head over to www.1964emu.com and work your way up from there...

Give Glide64 a try for Video :)

You may try Jabo's DirectSound as well. It's a sound plugin, btw. See which one of these you like best and stick to it.

Oh and, you'll need eVoodoo to use Glide64 on your system. The homepage can be found in my sig.

My old PC didn't like 1964 or Corn, but PJ64 worked fine, but try 1964 first as its faster.
