Ive jsut completed the snowhead temple and opened the rock to the races for the gorons and recieved a free explosive to enter Romani Ranch, but how do I get epona do i have to be on a certain day to start the challenge,?

Yes, you must be on the first day to start the quest to get Epona, on the night of the first day the ghosts will come and er umm.. well I said too much already.
