Mupen64 ReRecording has a record function.
In Pj64 you can only record with tools like Fraps (fraps.com).

Oops. Died again.
Depending on how you output the video for your game (I have my video card set up to link directly into my VCR and into my television) you could record to your VCR like I do.
Of course, I can also cheat and use PJ64 on my laptop and run the S-Video out to the S-Video in for my desktop as well the headphone out into the stereo input... then play in Fullscreen mode and record with my capture card. Not that I see any logical reason to do such a thing... *cough* >_>
